Ironstone Cabernet Sauvignon 2012

If you’re looking for a cab which is less fruit forward and more leathery/tobacco-like, this is a good choice.  Not overpowering but present with good blackberry character to round things out.
One site (lcbo) reports that there is some merlot blended into this vintage.

McWilliams Cabernet Sauvignon 2009

Overall a decent weekday wine.  Not a lot of structure or depth but worth picking up a bottle if you’re looking for a different general list cabernet sauvignon priced around 15 bucks.

35 South Cabernet Sauvignon Reserva 2009

A big, fruit forward, juicy cabernet sauvignon from Chile isn’t something I’ve had in years.  They had a good run in 2007-2008 but it’s been an uphill battle ever since.  Was pleasantly surprised with this bottle.
A strong red weighing in at 14.0 %

Jacob’s Creek Shiraz Cabernet 2006

Overall a fairly well rounded blend, although the two varietals together made me lean towards a merlot; since the shiraz’s pepper notes weren’t announcing themselves loudly.  Medium oak and rich plum were the center of attention in this bottle.
The bottle says this wine has won a few Asian awards…maybe my food pairing was wrong…lemme know!

Ironstone Cabernet Sauvignon 2007

A benchmark California cab. Very approachable and hits all the marks one would expect.
Because I’ve cellared this bottle for a while, I couldn’t find it’s LCBO number, but be sure to check out their next vintage when it hits shelves.  I’ve just put their merlot on my shopping list: VINTAGES# 704353

Hillebrand Trius Cabernet Sauvignon 2007

Once again my favourite brand doesn’t disappoint! The 2007 vintage will surely be a crowd pleaser due to it’s well balanced palate and nicely integrated tannins.
This cab has an excellent nose but a bit more depth and structure on the palate and this would be an incredible bottle. Watch for subtle hints of cedar and spice on the finish.

Perez Cruz Cabernet Sauvignon Reserva 2007

This is the 2007 vintage of the site favourite 2005. Once finding such a great wine you hope that subsequent years will be on par or better, but this vintage reminds us that grapes and wine are living, breathing, unformulated works – the weather changes from year to year, as does the soil and grapes, making the recipe change and so on.
With all the above said, this is still a good wine, just not as great as previous vintages. You can tell it spent a bit too much time in the barrel and didn’t taste as refined as it could be.  Well worth a try if you particularly like french or ontario reds.
Tip: drink a bottle and cellar the other for 1 or 2 years

Gray Fox Cabernet Sauvignon 2006

The LCBO has promoted this wine as part of their ‘Taste California’ release (on the value end of the scale).
Take note that this is NOT a ‘Big California Cab’. It is a light-medium bodied red that could pull up a chair at the lunch table.
